Start with compression and swing speed
Compression is how much the ball deforms at impact, and it should match your swing speed. Slower swings (under ~85 mph driver speed) compress lower-compression balls (40 to 70) more efficiently for better distance and feel. Faster swings (95 to 105+ mph) get the most from firmer tour balls (85 to 100+). This is the foundation of a ball fitting.
Cover and spin: urethane vs. ionomer
The cover controls greenside spin. Urethane covers (on tour balls) grab the greens for more short-game spin and control. Ionomer/Surlyn covers (on distance and soft balls) spin less, last longer, and cost less. Better players usually want urethane; most golfers do fine, and save money, with a well-matched mid-priced ball.
